Remove the entire contents — grease cap, water column and settled solids — rather than skimming the top layer.

Wall and baffle clean-down
Clean interior walls, baffles and the inlet and outlet tees so the unit works as designed on the next cycle.

Check baffles, tees and lids for damage, note anything failing, and refill with clean water where appropriate.

Questions about grease interceptor cleaning
What is the difference between a grease trap and a grease interceptor?
The terms overlap in everyday use. In practice, a grease trap usually means a smaller under-sink or in-kitchen unit, and an interceptor means a larger in-ground tank sized for the whole kitchen. Both separate fats, oils and grease from wastewater; the interceptor holds much more and is serviced with a vacuum truck.
Do you clean the whole unit or only pump the top layer?
The whole unit. Skimming the grease cap leaves settled solids behind, which is the part that eventually blocks the outlet.
Can you service a unit under a parking lot?
Yes. Units under parking and drive areas are common in Calgary; we set up around traffic and reinstate the lids when finished.
